When people learn I’m a vegetarian who hates to cook, they inevitably ask, “Then what do you actually eat?” Perhaps surprisingly, I often struggle to answer that question. Don’t get me wrong, I eat all day long, and when I’m not eating I’m often thinking about food, but what is it?
The point of this blog is to show what I eat to help other vegetarian parents who don’t enjoy cooking. You don’t have to love to cook to be healthy. You don’t have to be creative in the kitchen to thrive as a vegetarian.
