Cheesy Zucchini-Potato Hash

My dinner was so delicious tonight that it has made me ready to admit one of the secret reasons I wanted to start this blog. I was hoping that, as an obliger–click here if you want to know more or find out what you are–having a blog would encourage me to get a tiny bit creative. I’m never going to be a top chef, but I could stand a little more variety in my cooking. Tonight, fueled by the knowledge that I would photograph my dinner, I thought outside the box a bit (at least for me).
Recently I bought myself a Veggetti. So far the only thing I’ve done with it is make zoodles, zucchini noodles. Throw some vodka sauce on there and they’re delicious, but they were getting boring. Well, tonight I Veggettied (new word) a small potato (about 2 smart points worth) first and threw it in the frying pan with about a teaspoon of olive oil. While that was cooking I Veggettied a large zucchini. When the potato started to brown I added the zucchini and sprayed a little more oil on top. I wanted the zucchini to brown but it wasn’t happening, then, a stroke of genius (or basic cooking knowledge, whatever). I added about 1 tablespoon of parmesan, let it melt a little then flipped the strings over and added another 1 tablespoon of parmesan. When I flipped it again I realized the cheese was browning perfectly! So of course I calculated the points and, realizing I had points to spare, I added 1/4 cup of shredded reduced-fat mozzarella. On top of that a little salt and pepper and OH MY GOODNESS!!! Cheesy, potato-y, melty goodness that was mostly zucchini!!!

I highly recommend this combination!!!

Ingredients

Small Potato – 1 – 2 to 3 smart points

Zucchini – 1 – 0 smart points

Olive Oil – 1 tsp – 1 smart point

Parmesan – 2 tbsp – 4 smart points

Mozzarella – 1/4 cup – 2 smart points
