Veggie Burger with Roasted Potatoes, Green Beans, and Avocado

Much of the time, my dinner is simple, so simple. 

Microwave a bag of lightly sauced veggies, throw a veggie burger in the toaster oven, cut up an avocado while those are cooking, and ta-da! Dinner.


Veggie burger – 3 smart points

Veggies – whole bag – 5 smart points

Avocado – the parts that weren’t brown – 4 smart points (I highly suggest weighing your avocados to determine point values!!)
