I was on my own for this one since my husband doesn’t like artichokes or olives, and I think it was the easiest to actually cook. No oven involved at all, just a frying pan. The final product was de-li-cious!!! I also got smart about points. I took less than half the potatoes, feta, and aioli, and half of the artichokes, tomatoes, and all of the arugula (don’t worry, I have more).
Then, to track it I put the individual items (that have points) into my tracker with about how much I ate. It isn’t a perfect science but I came out with 13 points and that seems right, although still much higher than a standard dinner for me.
All in all a great dinner!!
