Hungryroot Winter Veggie and Curry Bowl

I forgot to take photos during the prep, but this bowl turned out delicious and look how colorful!! It took longer than most of the Hungryroot dishes have (around 25 mins), but was worth the wait. I wasn’t sure if I would like the curry chickpeas but they were good, according to all family members.

I was nervous about Grant trying his plate, so I included a clementine as a safe food. He ended up eating all of his clementine, a few chickpeas, and nothing else…. even though he ate the brown rice and quinoa last time we had it and usually likes butternut squash.

He happily ate a cookie for dessert, of course.
